  1. This recipe will make 2-3 servings of Fish in Lemon Butter Sauce.
  2. Pat dry the fish fillets with paper towels to remove excess moisture.
  3. Season both sides of the fish fillets with salt and black pepper.
  4. Take one fish fillet and gently press it into the rice flour, coating both sides evenly. In a large pan, heat butter and olive oil over medium-high heat.
  5. Add the fish fillets to the skillet and cook for about 3-4 minutes on each side, or until the fish is golden brown and cooked through. The cooking time may vary depending on the thickness of the fillets. Remove the fish from the pan and set aside.
  6. In the same pan, add the remaining 1 tablespoon of butter.
  7. Add minced garlic and lemon zest to the skillet. Sauté for about 1 minute until fragrant.
  8. Reduce the heat to low and return the cooked fish fillets to the pan, spooning the lemon butter sauce over them.
  9. Cook for another 1-2 minutes to heat the fish through and allow it to absorb the flavors of the sauce.
  10. Garnish with chopped fresh parsley and lemon slices
