Instructions

  1. This recipe will make 2-3 Parathas.
  2. Take a large container and add whole wheat flour to it. Now, slowly add hot water and start mixing it gently by hand. Keep on adding water till you obtain the dough of required consistency.
  3. Set the dough aside for 10-15 minutes and let it rest.
  4. In mixing bowl, add grate tofu, green chili, garam masala and salt.
  5. Mix well to evenly combine the spices with the grated paneer.
  6. Next, divide the dough into equal portions. Roll it to make balls and then flatten each portion using hands.
  7. Put the stuffing into the middle of the flattened dough uniformly and roll using hands again.
  8. Dust the dough with small amount of wheat flour for easier rolling.
  9. Now, using a rolling pin (belan), roll the stuffed dough into medium-sized circles. It should be uniform and without any holes.
  10. Heat the pan for 1-2 minutes, adjust the flame to medium and place the uncooked paratha on it.
  11. Cook the paratha for about 30 seconds or until brown spots develop. Add some ghee on top of paratha and then flip and cook on other side for another 30 seconds.
  12. Remove it from pan and (optional) lightly brush the top of paratha with small amount of desi ghee if needed.
  13. Repeat the process for remaining dough.
  14. Serve hot with pickle or raita!
