- This recipe will make 1 serving of solkadhi.Soak kokum pods in 1/2 cup warm water for 30-45 minutes.
- Squeeze the pods to extract the juices, retaining the warm water with the extract.
- In a mortar, crush together green chilli, cumin seeds, garlic cloves, coriander leaves, and salt until they form a rough paste.
- In a mixer-grinder, blend freshly grated coconut, beetroot with water to make a smooth paste.
- Strain through a fine sieve to extract fresh coconut milk. Repeat for desired thickness.
- In a bowl, mix the extracted coconut milk, kokum concentrate, and crushed garlic and chili spice paste. Stir well.
- Taste and adjust seasoning as needed.
- Garnish Solkadhi with mint leaves or chopped coriander.
- Chill the Solkadhi and serve.
