- Preparing the Mustard Paste:
- Soak yellow mustard seeds in water for about 2 hours.
- Drain the water and blend the soaked mustard seeds into a smooth paste using a little water. You can also add a green chili to the paste for extra flavor.
- Cooking Healthy Shorshe Ilish:
- Rub the fish pieces with turmeric powder and a pinch of salt. Let them sit for about 15 minutes.
- Heat a non-stick pan over medium heat and add the mustard oil. Allow it to heat up but not smoke.
- Reduce the heat and add the green chilies.
- Add the mustard paste to the hot oil and sauté for a few minutes until it turns aromatic and slightly thick.
- Add a little water to the mustard paste to achieve the desired consistency for the sauce. You can also add 1-2 teaspoons of low-fat yogurt at this stage for a creamy texture.
- Season the sauce with salt and a pinch of sugar if desired. The sugar helps balance the bitterness of the mustard.
- Gently place the marinated hilsa fish pieces into the sauce.
- Cover the pan and cook over low heat for about 10-15 minutes, or until the fish is cooked through. Be careful not to overcook, as hilsa is a delicate fish.
- Once the fish is cooked, remove the pan from the heat.
- Garnish with fresh coriander leaves if desired.
- Serve this healthier version of Shorshe Ilish with steamed rice or whole-grain rice for a delicious and nutritious meal.
- The reduced oil and added yogurt make it a lighter and healthier option while retaining the authentic flavor of the dish. Enjoy!
