- This recipe will make 1-2 serving of Rice Puttu.
- Wash and soak rice overnight or for 8 hours.
- Drain and spread the rice on a kitchen towel to dry for 20 minutes, keeping a bit of moisture.
- Grind the rice until it is mildly coarse.
- In a large bowl, mix the ground rice with salt and grated coconut.
- Sprinkle 2 tbsp water and mix until crumbly. The mixture should hold together when pressed but crumble when released.
- Let it sit for 10-15 minutes.
- In a Puttu mold, layer rice mixture, coconut, and top with more rice mixture. Lightly press and cover.
- Fill the Puttu steamer with water and place the mold inside.
- Steam on high heat for 10 minutes. Let steam escape for the last 5 minutes.
- Remove the mold, push the steamed Puttu onto a plate, and repeat with remaining mixture.
- Serve with Kadala Curry .
