  1. A nutritious Andhra-style Pesarattu, made from green gram and rice, served with a topping of finely chopped vegetables for a wholesome start to your day.
  2. This recipe will make 2 servings of Pesarattu.
  3. Soak the green gram and rice in water overnight or for at least 6 hours.
  4. Drain the water and blend the soaked green gram and rice along with ginger, green chilli, cumin seeds, and salt. Add water gradually to make a smooth batter of pouring consistency.
  5. Heat a non-stick pan or griddle over medium heat. Brush it lightly with ghee.
  6. Pour a ladleful of the batter onto the hot pan. Spread it evenly in a circular motion to form a thin dosa.
  7. Sprinkle some finely chopped onions, tomatoes, and capsicum over the dosa while it's still moist on top. Press the toppings lightly with a spatula.
  8. Drizzle a little ghee around the edges and on top of the vegetables. Cook until the bottom of the dosa turns golden and crispy.
  9. Flip the dosa carefully and cook for another minute or until the vegetables are slightly cooked and the dosa is crispy.
  10. Fold the dosa and serve hot with chutney or sambar of your choice.
  11. Repeat the process with the remaining batter, adding more ghee to the pan as needed.
  12. Serve the Pesarattu hot, making sure to enjoy the crispy edges and savory toppings for a fulfilling breakfast or snack
