- This recipe will make 3 servings of Pathiri.
- Bring water to a rolling boil in a wide pan. Add salt and oil.
- Reduce heat to low and gradually add rice flour, stirring continuously until the dough forms.
- Cover the pan and let the dough cook for 10 seconds.
- Turn off the heat and knead the dough with a wooden spoon.
- Grease your palms with coconut oil and knead the warm dough until soft and non-sticky.
- Do not add more water or flour.
- Divide the dough into lime-sized balls.
- Roll each ball on a slightly floured surface into thin circles, or use a pathiri/roti press.
- Heat a griddle or flat pan over medium heat.
- Cook each pathiri for 20-30 seconds on each side, gently pressing with a flat ladle until it puffs up. Ensure the pathiri remains off-white.
- Serve Ari Pathiri with Kerala Chicken Curry.
