  1. This recipe will make 4 servings of Onion Chutney.
  2. Slice onions into medium pieces and set aside.
  3. Heat oil in a pan. Add cumin seeds and dry red chilies. Sauté for a few seconds.
  4. Add urad dal and sauté until it turns golden yellow. Transfer this to a small dish and let it cool.
  5. In the same pan, add 1 teaspoon of oil. Add the chopped onions and sauté well for 4 to 5 minutes until the raw smell disappears. Turn off the heat and let it cool.
  6. Grind the cooled urad dal, cumin seeds, and red chilies into a coarse powder.
  7. Add the fried onions, salt, tamarind, and jaggery to the grinder.
  8. Rind to make a paste. Add 2-3 tablespoons of water for a thinner consistency. Be cautious not to add too much water.
  9. Heat oil in a pan for seasoning. Add mustard seeds and let them splutter. Add curry leaves and turn off the heat.
  10. Pour this seasoning over the chutney and mix well.
  11. Enjoy this flavorful Onion Chutney with idlis or dosas for a delicious South Indian breakfast or snack!
