- "This recipe will make 5 -6 serving of Nutri Rice Pulao.
- Soak the rice in water for about 20-30 minutes, then drain.
- Boil 2 cups of water, add a pinch of salt, and soak the soya chunks in it for 10-15 minutes until they soften. Squeeze out the excess water from the soya chunks and set aside.
- Heat oil or ghee in a heavy-bottomed pan or pressure cooker over medium flame.
- Add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté for a few seconds until aromatic.
- Add the sliced onions and green chilies. Sauté until the onions turn golden brown.
- Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add turmeric powder, red chili powder, and garam masala powder. Sauté for a minute.
- Add the mixed vegetables and soya chunks. Mix well and cook for 2-3 minutes.
- Add the soaked and drained rice. Gently mix to combine with the vegetables and spices.
- Add 2 cups of water and salt to taste. Mix well.
- If using a pressure cooker, close the lid and cook for 2 whistles. If using a regular pan, cover and cook on low heat until the rice is fully cooked and the water is absorbed (about 15-20 minutes).
- Once cooked, fluff the pulao gently with a fork. Garnish with fresh coriander leaves.
- Serve hot with raita, pickle, or any side dish of your choice"
