- This recipe will make 6-7 servings.
- To make the nankhatai, sieve the plain flour, baking powder and baking soda into a bowl and keep aside.
- In a separate bowl, combine ghee and jaggery. Whisk this mixture for 10-12 minutes until it turns white, smooth, and fluffy.
- Add the plain flour mixture, rava, powdered almonds, powdered pistachios, cardamom powder and mix well to form a soft dough.
- Divide the dough into 20 equal portions and roll each piece in a 50mm diameter round flat nankhatai.
- Place into a baking tray at equal distance and garnish with a few almonds and press it lightly. Bake in a preheated oven at 160 degree celsius for 20-25 minutes.
- Allow the nankhati to cool them for 15-20 minutes.
- Serve the nankhati immediately or store into an airtight container and use as required.
