- This recipe will make 2-3 servings.
- Heat oil in a pan over medium heat.
- Add paneer cubes and shallow fry until they are golden brown on all sides.
- Remove the paneer cubes and set them aside on a plate.
- Prepare the Masala Paste:
- In the same pan, add the chopped onion and sauté until they become translucent.
- Add the garlic, ginger, and green chili. Sauté for 2-3 minutes until fragrant.
- Add chopped tomatoes. Sauté until the tomatoes soften.
- Transfer the mixture to a plate and let it cool.
- Blend the mixture into a smooth paste.
- In the same pan, heat the remaining oil.
- Add the bay leaf, green cardamom, and cumin seeds. Sauté for a few seconds until fragrant.
- Add the turmeric powder, red chili powder, and coriander powder. Sauté for a few seconds.
- Add the prepared paste to the pan. Mix well and cook for 3-4 minutes, stirring occasionally.
- Add the boiled peas and the shallow-fried paneer cubes to the pan.
- Then add salt, fenugreek leaves and 1 cup of water and mix well. Bring to a boil, then reduce the heat and let it simmer for 5 minutes.
- Garnish with chopped coriander leaves.
- Serve hot with roti or rice.
