- This recipe will make 5 servings of Masala Akki roti with Spinach.
- In a large mixing bowl, combine rice flour, finely chopped spring onion, spinach leaves, coriander leaves, curry leaves, green chillies, sesame seeds, and salt. Mix well.
- Gradually add water to the flour mixture and knead to form a soft and pliable dough. The dough should be soft enough to spread easily but not too sticky.
- Divide the dough into equal portions. Take a piece of parchment paper or a clean, wet cloth, and place a portion of the dough on it. With wet hands, pat the dough into a thin circle. Alternatively, you can use a rolling pin with a piece of plastic wrap to avoid sticking.
- Heat a tawa or griddle over medium heat. Once hot, invert the parchment paper or cloth over the tawa to transfer the roti. Gently peel off the paper or cloth. Drizzle some oil around the edges of the roti.
- Cook until the roti turns golden brown and crispy on the bottom. Flip and cook the other side, adding more oil as needed.
- Repeat the process with the remaining dough portions.
