- Making Whole Wheat Wraps (Paratha):
- In a mixing bowl, combine the whole wheat flour and a pinch of salt.
- Gradually add water and knead the flour into a smooth dough. The dough should be soft and pliable. Let it rest for about 15-20 minutes.
- Divide the dough into small, equal-sized balls and roll each ball into a thin, round paratha using a rolling pin and a little dry flour. Cook the parathas on a hot griddle or skillet until they have light brown spots on both sides. Set them aside.
- Preparing the Egg Filling:
- In a bowl, whisk the eggs with a pinch of salt and pepper.
- Heat a non-stick pan over medium heat and add 1 tablespoon of vegetable oil.
- Pour the whisked eggs into the pan and cook them as you would for scrambled eggs. Once they're cooked, remove from the heat and set them aside.
- Assembling the Egg Rolls:
- Place a paratha on a clean surface.
- Spread a portion of the scrambled eggs on the paratha.
- Add a generous amount of vegetable filling on top of the eggs.
- Drizzle a little lemon juice and sprinkle salt and pepper over the vegetables.
- Roll up the paratha tightly, like a wrap or roll, securing the ends with foil or parchment paper.
- Repeat the process for the remaining parathas and fillings.
- Your healthy Kolkata Egg Rolls are ready to be served. Enjoy them as a satisfying and nutritious snack or meal.
