- Marinating Chicken:
- In a mixing bowl, combine the yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, and salt to make the marinade.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or overnight for the best results.
- Preparing Rice:
- Rinse the Basmati rice thoroughly and soak it in water for about 30 minutes.
- In a large pot, bring 4-5 cups of water to a boil. Add the soaked and drained rice, green cardamom pods, cloves, cinnamon stick, and salt. Cook the rice until it's 70% cooked (it should still have a slight bite to it). Drain the rice and set it aside.
- Biryani Assembly:
- In a large, heavy-bottomed pot or biryani handi, heat 3-4 tablespoons of vegetable oil and 2-3 tablespoons of ghee over medium heat.
- Add the sliced onions and fry them until they turn golden brown and crispy. Remove a portion of the fried onions and set them aside for garnish.
- Add the marinated chicken to the pot and sauté for 5-7 minutes until the chicken is partially cooked and the marinade thickens.
- Add the boiled and fried potatoes and eggs to the chicken if you're using them. Mix gently.
- In a separate small pan, heat a little ghee and fry the green chilies for a minute or two. Add this to the chicken mixture.
- Layer the partially cooked rice over the chicken mixture.
- Sprinkle garam masala and drizzle saffron milk over the rice.
- Cover the pot with a tight-fitting lid and reduce the heat to low. Cook for 20-25 minutes, allowing the biryani to steam and the flavors to meld.
- Before serving, garnish the Kolkata Chicken Biryani with the reserved fried onions, fresh coriander, and mint leaves.
- Serve the biryani hot with raita or a side salad. Enjoy the rich flavors of this Kolkata-style chicken biryani!
