- Prepare Dough:
- Mix barley flour and whole wheat flour.
- Gradually add water and knead to form a soft dough.
- Cover and let it rest for 15-20 minutes.
- Prepare Filling:
- If using onion, grate it. If using broccoli, mooli, or gobhi, grate them and squeeze out excess water.
- In a bowl, mix the grated filling, green chili, chopped onion (if using), grated ginger, salt, dried mango powder,
- Carom seeds, turmeric powder, kitchen king masala, and chopped coriander leaves.
- Stuff and Roll Paratha:
- Divide the dough into equal-sized balls.
- Roll out each ball into a small disc.
- Place a spoonful of the filling in the center of the disc.
- Gather the edges and seal the filling inside.
- Gently roll out the stuffed ball into a paratha, being careful not to tear it.
- Cook Paratha:
- Heat a tawa or skillet over medium heat.
- Place the rolled paratha on the tawa.
- Cook on both sides until golden brown, using no oil.
- Press gently with a spatula to ensure even cooking.
- Serve:
- Serve hot with yogurt, raita, or chutney of your choice.
