- The recipe will make 2 servings of Thandai.
- Soak the Dry Fruits and Spices:
- Soak the almonds, cashews in warm water to make them soft. Soak the saffron strands in a tablespoon of warm milk for about 10 minutes to release its color and flavor.
- Grind the Dry Fruits and Spices:
- In a blender, combine the soaked almonds, cashews, cardamom pods, dates, fennel seeds,melon seeds and the soaked saffron (including the milk it was soaked in).
- Boil the Milk and Add the Paste:
- Take milk in a pan, add the prepared paste and boil for about 3-4 minutes.Allow the mixture to simmer, then remove from heat and let it cool down completely.
- Assemble the Drink:
- Fill two tall glasses with ice cubes.Top up the glasses with the milk, gently stirring to mix everything together.
- Garnish and Serve:
- Garnish with rose petals, chopped pistachios, and saffron strands for a festive touch.Serve chilled and enjoy your healthy, refreshing thandai!
- You can also use almond milk for a more heallthier version.
