- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine roasted oats, almond flour, pumpkin seeds, cranberries, chia seeds, raisins, flaxseed powder, and cinnamon. Mix well.
- In another bowl, combine the mashed bananas, maple syrup, vanilla essence, and coconut oil. Mix until the wet ingredients are well incorporated.
- Pour the wet ingredients into the bowl of dry ingredients. Mix until everything is well combined and forms a cookie dough-like consistency.
- Using a spoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them apart.
- Use the back of the spoon or your fingers to gently flatten and shape each cookie.
- These cookies won't spread much during baking, so shape them to your desired thickness.
- Bake in the preheated oven for about 15-20 minutes or until the edges turn golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, enjoy your healthy breakfast cookies! They make a great on-the-go breakfast or a nutritious snack.
