- Prepare the Potatoes:
- Boil baby potatoes until tender. Peel and prick them with a fork.
- In a non-stick pan, use 1 tsp oil to lightly sauté the potatoes until golden brown.
- Prepare the Masala:
- In the same pan, add 1 tsp oil. Add cumin seeds and fennel seeds. Let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger garlic paste and green chilies. Cook for a minute.
- Add Spices and Tomatoes:
- Add turmeric powder, red chili powder, and salt. Mix well.
- Add tomato puree (3 tomato in 1/2 cup water) and cook until the oil separates from the masala.
- Combine Potatoes and Masala:
- Add sautéed potatoes to the masala. Mix well.
- Add whisked yogurt and mix until well combined.
- Sprinkle garam masala and kasuri methi. Mix well.
- Simmer:
- Cover the pan with a tight lid and simmer on low heat for 10-15 minutes until the flavors blend well.
- Stir occasionally to prevent sticking.
- Finish and Serve:
- Garnish with fresh coriander leaves.
- Serve hot with roti or rice.
