  1. Wash and chop the carrot, celery, and onion.
  2. Smash the garlic clove.
  3. In a small pot, combine the chicken piece, water, chopped carrot, celery, onion, smashed garlic, bay leaf, and parsley (if using).
  4. Place the pot over medium-high heat and bring the mixture to a boil.
  5. Once it reaches a boil, reduce the heat to low and let it simmer for about 30-40 minutes, or until the chicken is cooked through and the vegetables are tender. Skim off any foam that rises to the top.Remove the chicken piece and set it aside (you can use the cooked chicken for another recipe or shred it back into the broth).
  6. Strain the broth through a fine mesh sieve into a bowl or another pot, discarding the vegetables and bay leaf.
  7. Season the broth with salt and black pepper to taste.
  8. Serve hot.
