  1. Rinse the rice thoroughly and soak it in water for about 15 minutes.
  2. In a large, heavy-bottomed pan, bring 2 cups of low-fat milk to a boil.
  3. Drain the soaked rice and add it to the boiling milk. Reduce the heat to low and let the rice simmer in the milk. Stir occasionally to prevent sticking to the bottom.
  4. Once the rice is cooked and the milk has thickened (this may take 20-30 minutes), add the jaggery or sugar substitute and the crushed cardamom. Adjust the sweetness to your preference.
  5. If using saffron, you can soak a small pinch of saffron strands in a tablespoon of warm milk for a few minutes and then add it to the pudding for a delicate saffron flavor.
  6. Continue to simmer for a few more minutes until the jaggery or sugar substitute is well incorporated.
  7. Once the Chaaler Payesh has reached the desired consistency and sweetness, remove it from the heat.
  8. Garnish with slivers of almonds or pistachios if desired.
  9. Serve the Chaaler Payesh warm or chilled.
  10. By using low-fat milk and reducing the amount of jaggery or sugar substitute, you can make this traditional Bengali dessert healthier while retaining its delicious flavors. Enjoy this sweet treat in moderation as part of a balanced diet.
