  1. Prepare the Spread:
  2. Blend mint leaves, coriander leaves, anardana, green chili, and salt with curd to make a smooth paste.
  3. Prepare Vegetables:
  4. Thinly slice the boiled potato, cucumber, tomato, and onion.
  5. Assemble Sandwich:
  6. Spread the curd mint coriander paste on one side of each bread slice.
  7. Place a layer of potato slices on one bread slice.
  8. Add layers of cucumber, tomato, and onion slices.
  9. Sprinkle salt, black pepper, and chaat masala over the vegetables.
  10. Toast Sandwich:
  11. Cover with another slice of bread (spread side down).
  12. Lightly spray a griddle pan with olive oil.
  13. Toast the sandwich on the griddle pan until both sides are golden brown and crisp.
  14. Serve:
  15. Cut the sandwich diagonally and serve with additional curd mint coriander spread or your favorite low-calorie dip.
