  1. Bendakaya Pulusu is a tangy and spicy Okra stew, simmered in a tamarind sauce with a hint of sweetness, making it a flavorful addition to any meal.
  2. This recipe will make 2-3 servings of Bendakaya pulusu.
  3. Heat oil in a pan over medium heat. Add mustard seeds and fenugreek seeds, and let them splutter.
  4. Add the finely chopped onions to the pan and sauté until they become translucent.
  5. Add the chopped tomatoes and cook until they become mushy.
  6. Add the cut bhindi to the pan. Stir and sauté for a few minutes until the bhindi starts to become tender.
  7. Stir in turmeric powder, chilli powder, and coriander powder. Mix well to coat the bhindi with the spices.
  8. Pour in the tamarind extract and add enough water to cover the bhindi. Bring to a boil.
  9. Reduce the heat to a simmer. Add salt and jaggery, mixing well. Cover and let it cook until the bhindi is fully cooked and the pulusu has thickened to your desired consistency.
  10. Garnish with chopped coriander leaves.
  11. Serve the Bendakaya Pulusu hot with rice for a comforting and flavorful meal that perfectly balances tangy, spicy, and sweet flavors.
