- This recipe will make 2-3 servings of Bendakaya pulusu.
- Heat oil in a pan over medium heat. Add mustard seeds and fenugreek seeds, and let them splutter.
- Add the finely chopped onions to the pan and sauté until they become translucent.
- Add the chopped tomatoes and cook until they become mushy.
- Add the cut bhindi to the pan. Stir and sauté for a few minutes until the bhindi starts to become tender.
- Stir in turmeric powder, chilli powder, and coriander powder. Mix well to coat the bhindi with the spices.
- Pour in the tamarind extract and add enough water to cover the bhindi. Bring to a boil.
- Reduce the heat to a simmer. Add salt and jaggery, mixing well. Cover and let it cook until the bhindi is fully cooked and the pulusu has thickened to your desired consistency.
- Garnish with chopped coriander leaves.
- Serve the Bendakaya Pulusu hot with rice for a comforting and flavorful meal that perfectly balances tangy, spicy, and sweet flavors.
