- Start by cleaning the Hilsa fish. Remove any scales and wash it well. You can cut the fish into smaller pieces if desired.
- Rub the fish pieces with a pinch of turmeric and salt. Let them sit for about 15 minutes.
- In a pan, heat 2 tablespoons of mustard oil (or any cooking oil you prefer). Mustard oil adds an authentic Bengali flavor, but it has a strong taste. If you prefer a milder taste, use a different cooking oil.
- Fry the fish pieces in the hot oil until they turn golden brown. Remove them from the pan and set them aside.
- In the same pan, add more oil if needed, and then add the sliced eggplant. Sauté until the eggplant becomes soft and slightly browned. Remove them and set them aside.
- Add the chopped onions to the pan and sauté until they become soft and translucent.
- Stir in the chopped tomatoes and green chilies. Cook until the tomatoes turn soft and the oil starts to separate from the mixture.
- Reduce the heat to low and add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well and cook for a few minutes, stirring constantly.
- Add the fried eggplant back to the pan and mix with the spices.
- Return the seared Hilsa fish pieces to the pan and gently mix them with the eggplant and spices.
- Add enough water to achieve the desired consistency for the curry. Cover the pan and simmer for about 10-15 minutes until the fish is cooked through.
- Garnish with fresh coriander leaves if desired.
