- Savor the flavors of Beerakaya Pachadi, a traditional Andhra-style chutney made with ridge gourd, enriched with spices and lentils, offering a perfect blend of health and taste.
- This recipe will make 3-4 servings of Beerakaya Pachadi
- Heat half the oil in a pan. Add chana dal and urad dal. Sauté until they turn golden brown.
- Add mustard seeds, cumin seeds, hing, curry leaves, and dry red chilli to the same pan. Let them splutter.
- Add the crushed garlic and green chilli. Sauté for a minute until the garlic is fragrant.
- Add the chopped ridge gourd, turmeric powder, salt, and a little water. Cover and cook until the ridge gourd becomes soft.
- Add the chopped tomato and cook until the mixture becomes mushy and the water evaporates.
- Let the mixture cool down. Once cooled, grind it to a coarse paste along with the dry coconut. The consistency should be thick.
- For the tempering, heat the remaining oil in a small pan. Add mustard seeds, cumin seeds, and sliced onion. Fry until the onion turns golden brown.
- Pour the tempering over the chutney and mix well.
- Serve Beerakaya Pachadi as a side dish with rice, roti, or dosas, enjoying the unique flavors of this traditional Andhra recipe.
