- Rice Preparation:
- Rinse the brown or unpolished rice thoroughly and soak it in water for about 30 minutes. Drain and set aside.
- In a pot, bring 1 3/4 cups of water to a boil. Add the soaked and drained rice, and cook it until it's 80% done (it should still have a slight bite). Drain and set aside.
- Basanti Pulao:
- Heat the vegetable oil in a large, heavy-bottomed pan or pot over medium heat.
- Add the cumin seeds, bay leaf, green cardamom, cloves, and cinnamon stick. Sauté for a minute or until they release their aroma.
- Add the thinly sliced onions and sauté until they turn translucent and slightly brown.
- Add the mixed vegetables and continue to sauté for a few minutes until they start to soften.
- Add the spice mix: turmeric powder, cumin powder, coriander powder, and red chili powder. Mix well and sauté for another couple of minutes.
- Gently fold in the partially cooked rice and salt. Be careful not to break the rice grains.
- Pour the saffron milk over the rice and give it a gentle stir to create the signature yellow color of Basanti Pulao.
- Cover the pot with a tight-fitting lid, reduce the heat to low, and let the pulao steam for about 15-20 minutes to finish cooking the rice.
- In the meantime, you can dry roast the cashews or almonds in a separate pan until they turn slightly golden, and then garnish the pulao with them if desired.
- Before serving, garnish with fresh coriander leaves.
- Serve the healthy Basanti Pulao with a side of raita or a light vegetable curry. Enjoy this nutritious and flavorful Bengali rice dish!
