- A robust Andhra-style Chicken Curry, richly spiced with a blend of traditional spices and a hint of coconut, offering a deeply flavorful and aromatic dish.
- This recipe will make 3 servings of Andhra style chicken curry.
- Marinate the chicken pieces with salt, turmeric powder, chilli powder, ginger paste, and garlic paste. Let it sit for at least 30 minutes.
- Dry roast the poppy seeds, cloves, cardamom, and dry coconut in a pan until fragrant. Allow it to cool, then grind into a fine paste, adding a little water as needed.
- Heat oil in a heavy-bottomed pan. Add the bay leaf, cinnamon stick, and finely chopped onions. Sauté until the onions turn golden brown.
- Add the marinated chicken to the pan, and cook on high heat for a few minutes until the chicken starts to brown.
- Lower the heat, add the ground spice-coconut paste, and slit green chilli to the chicken. Mix well to ensure the chicken is coated with the spices.
- Add enough water to cover the chicken, bring to a boil, then simmer covered on low heat for about 30-40 minutes, or until the chicken is tender and the oil starts to separate from the gravy.
- Sprinkle garam masala over the curry and mix well. Cook for an additional 5 minutes.
- Check the seasoning, and adjust the salt or chilli powder as needed.
- Serve the Andhra-style Chicken Curry hot, garnished with coriander leaves if desired. This dish pairs well with rice, roti, or any Indian bread for a fulfilling meal.
